Dragon Fruit & Grapefruit Bars Recipe

Bright, tangy, and tropical — these bars combine the zesty punch of grapefruit with the vibrant color and subtle sweetness of dragon fruit. Perfect for warm weather entertaining or a fresh twist on a classic citrus slice!

Ingredients

Crust:

  • 1 cup (120 g) all-purpose flour

  • ¼ cup (30 g) powdered sugar

  • ¼ tsp salt

  • ½ cup (113 g) butter, room temperature (cut into 8 pieces)

Filling:

  • 1 ½ cups (250 g) granulated sugar

  • ¼ cup (30 g) all-purpose flour

  • 4 large eggs

  • 1 tablespoon grapefruit zest

  • ½ cup (118 ml) fresh grapefruit juice

  • ½ cup (118 ml) fresh red dragon fruit purée 


Instructions

  1. Preheat oven to 175°C. Lightly grease or line an 11×7-inch baking dish with parchment paper, leaving a 2-inch overhang on both sides.

  2. Make the crust:
    In a food processor or stand mixer, combine flour, powdered sugar, salt, and butter. Mix until fine crumbs form and start to clump.
    Press evenly into the bottom of the prepared pan.
    Bake for 18–20 minutes, or until lightly golden.

  3. Make the filling:
    While the crust is baking, whisk together sugar and flour in a medium bowl.
    Add eggs, one at a time, whisking well after each.
    Stir in zest, grapefruit juice, and dragon fruit purée.
    Add pink food coloring if desired for a more vibrant finish.

  4. Pour the filling over the hot crust and return to oven.
    Bake for 20 minutes, or until the center is just set and no longer jiggles.

  5. Cool in pan for 1 hour, then refrigerate for 1–2 hours until firm.
    Lift out using the parchment overhang and slice into bars.

  • For extra texture, top with shredded coconut before baking.

  • Store leftovers covered in the fridge for up to 5 days.
