Vibrant breakfast, dessert, or anytime snack!
This pretty-in-pink chia pudding is as nourishing as it is delicious. Packed with omega-3s, protein, and antioxidants, it’s a satisfying treat that’s naturally sweet and bursting with tropical flair thanks to the dragon fruitpowder or fresh puree.
Ingredients:
¼ cup chia seeds (white or dark)
1 cup almond milk (or any plant-based milk)
1 tsp wild vanilla extract
1 tbsp dragon fruit puree or dragon fruit powder
1 tsp honey
Optional Layers & Toppings:
1 cup coconut yoghurt
3 drops of stevia (to taste)
Vanilla granola
Fresh raspberries
Shredded coconut
Method
- In a bowl, whisk together the plant-based milk, wild vanilla extract, Dragon Fruit powder, and honey
- Add the chia seeds and whisk again for 1–2 minutes, until the mixture begins to thicken.
- Cover and refrigerate for at least 1 hour to allow the chia seeds to fully absorb the liquid. For best results, make it the night before and leave it in the fridge overnight.
- In the morning, give the pudding a quick stir. If it's too thick, add a splash more milk to adjust the consistency.
- Layer into a jar or bowl, alternating with coconut yoghurt or your favorite layers, and finish with your choice of toppings.
