A dreamy dessert with a creamy vanilla custard base, flaky pastry, and a vibrant dragon fruit jelly topping. Perfect for showcasing your dragon fruit harvest!
Ingredients
For the Custard Slice:

2 sheets puff pastry

3 cups milk

½ cup sugar

⅓ cup cornflour

¼ cup custard powder

60g butter
-
2 tsp vanilla extract

2 egg yolks
For the Dragon Fruit Jelly:
- 1 thinly sliced dragon fruit
- Watermelon or raspberry jelly
- ¼ cup hot water (to dissolve gelatin)
Instructions
1. Prepare the Pastry Base:

Preheat oven to 200°C (390°F).

Bake puff pastry sheets between two baking trays to keep them flat (approx. 15 mins).
Cool and trim to fit a square/rectangular slice tray.
2. Make the Custard:

In a saucepan, whisk milk, sugar, cornflour, and custard powder until smooth.

Place over medium heat, stirring constantly until thickened.

Remove from heat and quickly stir in butter, vanilla, and egg yolks.

Pour custard over one pastry sheet in a lined tray, top with second pastry sheet.

Chill in fridge for 1–2 hours until set.
3. Make the Dragon Fruit Jelly:
- Dissolve jelly in hot water, stir until completely melted.
Place slice dragon fruit in a tray - Add dissolved gelatin and mix well.
- Put in the fridge and Let set. At least 2–3 hours or overnight.
- Cut into slices and and add to the top of your slice
To Serve:
Slice carefully with a hot, clean knife for neat layers.
Optional: decorate with extra dragon fruit cubes, mint, or edible flowers.
