This will also help you to understand the difference in varieties. It's not just colour and flavour that changes. Features of fruit that vary are listed below.
Dragon fruit skin thickened- Commercial varieties tend to have thicker skin so they travel better and perhaps more importantly they store longer in a cold room.
Flesh Texture- Some have soft flesh, jelly flesh or firm flesh.
Flesh colour also varies greatly.
Dragon fruit seeds - These can be yummy crunchy seeds adding a nice texture to your pallet. then other seeds just blend in and you will not feel them.
Fin size and colour also change between varieties, some stay green or blush brighter colours.
Flavour and sugar content will also distinguish the differences in fruit.
