Taste & Quality

San Ignacio is celebrated for its:

  • Raspberry-like flavour first year and the second year had some cherry qualities

  • Very juicy, smooth flesh

  • Pleasant crunchy seeds

  • The Brix in the first year was 12.3  and as expected 2nd Year developed a Brix of 14. (with higher sweetness expected as plants mature)

  • In a University of California evaluation they achieved a Brix of 15.6. So we will keep improving our soil and plant health to achieve this.
