Ingredients:
- 1 and 1/2 cups all-purpose flour
- 2 teaspoons of dragon fruit flower or 1/4 dragon fruit blended into a pure if you add fresh dragon fruit only add 1 cup of milk. fresh dragon fruit pure gets added with the we ingredients.
- 3 and 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon caster sugar (optional, adjust to taste)
- 1 and 1/4 cups milk
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon wild vanilla extract
Instructions:

In a large mixing bowl, whisk together the flour, pink pitaya powder, baking powder, salt, and sugar (if using).

In a separate bowl, beat the egg and then stir in the milk, melted butter, and vanilla extract (if using).

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps in the batter.

Heat a fry pan or griddle over medium heat. Lightly grease the surface with butter or cooking spray.

Once the fry pan is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancakes and the edges start to look set, about 2-3 minutes.

Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.

Transfer the cooked pancakes to a plate and keep warm while you cook the remaining batter. You can keep the pancakes warm in a low oven (around 200°F or 90°C) or covered with a clean kitchen towel.
