1–2 firm, fresh dragon fruit (red-skinned varieties work best for color)

1 cup sugar

½ cup water

¼ cup glucose syrup or corn syrup (to prevent crystallization)

A few drops of lemon juice

Bamboo skewers or sticks

Instructions:

Prep the fruit: Peel your dragon fruit and cut into thick slices or cubes. Pat dry with a paper towel. Insert skewers into each piece.

Make the candy coating: In a small saucepan, combine sugar, water, glucose syrup, and lemon juice. Stir gently until dissolved, then bring to a boil without stirring further.

Watch the heat: Heat the mixture to 150°C (300°F) or the “hard crack” stage on a candy thermometer.

Dip and swirl: Carefully dip each dragon fruit piece into the hot syrup, letting the excess drip off. Place on baking paper or a silicone mat to cool and harden.

Set and enjoy: Once cooled, you’ll have a glossy, crunchy dragon fruit treat that’s sure to impress.
