1 tin of Pandaroo Sweet Condensed Coconut Milk | 320g

1/2 tsp wild vanilla extract

2 cup cups desiccated coconut
- 1 tbs of Dragon fruit powder

Step 1: Begin by preheating your oven to 180°C.
Step 2: In a bowl, take 2 egg whites at room temperature and use an electric mixer to beat them until soft peaks form.
Step 3: In a separate bowl combine your desiccated coconut, and dragon fruit powder.
Step 4: Mix in the condensed milk and wild vanilla to the desiccated coconut bowl.
Step 5: Incorporate coconut and egg mixture by gently fold it through with a spatula until evenly distributed. Take care not to overwork the mixture.
Step 6: On a baking tray lined with greased baking paper, place spoon fulls of the batter.
Step 7: Bake in the preheated oven for 15-18 minutes, or until the macaroons are lightly browned. Once baked, remove them from the baking paper immediately and allow them to cool on wire racks before serving.
I like to drizzle with some melted chocolate
