Dragon Fruit Macaron Recipe.

INGREDIENTS

For the Macarons

  • 6 egg whites
  • 1/2 cup sugar
  • 2 cups ground almonds
  • 2 1/2 cups confectioner's sugar
  • Dragon fruit powder and if you don't have this you could use red/ blue food die to make the desired colour.

For the dragon fruit frosting

  • 2tbs dragon fruit powder
  • 1 cup confectioner's sugar (icing sugar)
  • 1/4 cup milk

For the decoration

  • Chia seeds
  • Dragon fruit powder for dusting
  • Icing sugar and milk for glaze
  • Chia seeds and extra dragon fruit powder for decoration

INSTRUCTIONS

  • Beat egg whites until white and foamy.
  • Add in sugar and dragon fruit powder or food coloring and beat until soft peaks form.
  • Fold in ground almonds and confectioner's sugar.
  • Spoon macaron batter into a plastic bag and pipe into 6cm rounds onto a baking paper lines baking sheet.
  • Let piped macarons sit for 30 minutes then bake at 180c for 15 minutes.
  • To prepare frosting, whisk together icing sugar, milk and 1 teaspoon of dragon fruit powder. 
  • After macarons have cooled for at least 10 minutes, pipe a small round of frosting in the center of two macarons.
  • Decorate with a simple 1 tsp of milk to 1/4 cup of icing sugar glaze. Dip macaroons into the glaze and decorate with a pinch of chia seeds.
