INGREDIENTS
For the Macarons
- 6 egg whites
- 1/2 cup sugar
- 2 cups ground almonds
- 2 1/2 cups confectioner's sugar
- Dragon fruit powder and if you don't have this you could use red/ blue food die to make the desired colour.
For the dragon fruit frosting
- 2tbs dragon fruit powder
- 1 cup confectioner's sugar (icing sugar)
- 1/4 cup milk
For the decoration
- Chia seeds
- Dragon fruit powder for dusting
- Icing sugar and milk for glaze
- Chia seeds and extra dragon fruit powder for decoration
INSTRUCTIONS

Beat egg whites until white and foamy.

Add in sugar and dragon fruit powder or food coloring and beat until soft peaks form.

Fold in ground almonds and confectioner's sugar.

Spoon macaron batter into a plastic bag and pipe into 6cm rounds onto a baking paper lines baking sheet.

Let piped macarons sit for 30 minutes then bake at 180c for 15 minutes.

To prepare frosting, whisk together icing sugar, milk and 1 teaspoon of dragon fruit powder.

After macarons have cooled for at least 10 minutes, pipe a small round of frosting in the center of two macarons.
- Decorate with a simple 1 tsp of milk to 1/4 cup of icing sugar glaze. Dip macaroons into the glaze and decorate with a pinch of chia seeds.
