You will always get a different flavour of jam depending on the variety of dragon fruit you use to make jam.
I used Columbian Supreme Red to make this jam.
The cooked seeds turned crunchy and tasted similar to sesame seeds.
1kg of Dragon fruit
1kg of sugar
1 lemon juice
Place 1/2 cup of water in Sause pan and add in diced dragon fruit
Add in sugar and keep stirring until the sugar is dissolved.
Add lemon juice
Boil rapidly for 10min until mixture has reached a setting point .
Test by placing a little jam on a plate and leave cool. Push your finger into the jam if it wrinkles, it has set.
Let stand for 30min
Add to sterile jars while hot to seal.
Store in a dark place.
