2 1/4 cups self-raising flour

3/4 cup caster sugar

1 egg

1/2 cup vegetable oil

1/4 cup milk
- 1/2 puree red or purple dragon fruit ( fresh or frozen dragon fruit blended)
- 1/2 cup of choc chips
Step 1
Preheat oven to 190C or 170C fan-forced
Line a 12 hole, 1/3 cup capacity non-stick muffin pan with paper cases.
Step 2
Sift self-raising flour and caster sugar into a large bowl. Make a well in the centre.
Step 3
Combine egg, oil and milk in a jug. Pour milk mixture into the well of the dry mixture. Using a large metal spoon, stir until just combined. (Don't over stir)
Once combine add in the choc chips.
Step 4
Spoon mixture into muffin trays.
Bake for 15- 20 minutes or until a skewer inserted into the centre comes out clean.
Stand in pan for 2 minutes before turning out onto a wire rack to cool.
