Dragon Fruit Cheese Cake Recipe

This Dragon Fruit Cheesecake will wow your guests with its vibrant color, fresh fruit decorations, and simplicity. With just one day needed for setting, it’s the ideal showstopper that adds flair to your dessert table without much effort.

I love a recipe that’s simple—minimal equipment, minimal mess, and minimal steps. This Dragon Fruit Cheesecake ticks all those boxes and is incredibly easy to make.

Ingredients:
• ¼ cup cold water
• 1 tbsp gelatin powder
• 250g packet of your arrowroot biscuits 
• 100g butter, melted
• 500g cream cheese, softened
• 2/3 cup caster sugar
• 1 large red dragon fruit, diced (approx. 360-400g of flesh), You can use frozen if you don't have fresh. 
• 1 can sweetened condensed milk
• Extra dragon fruit (any colour) or other fruit like berries for decoration (I used both fresh dragon fruit and a simple blueberry compote to serve)


Method:

  1. Grease a 22cm round springform pan and line the sides with baking paper, making sure the paper extends at least 1cm above the pan edge.
  2. In a small heatproof jug, combine ¼ cup of water and gelatin powder. Microwave on HIGH for 20–30 seconds until dissolved, stirring at the halfway mark. Set aside to cool. The mixture should remain liquid, not turn into a gel.
  3. In a food processor, blitz the biscuits into fine crumbs. Add the melted butter and process until combined. Press the biscuit mixture evenly over the base of your prepared pan, then refrigerate while you make the filling.
  4. Clean the processor, then blend the softened cream cheese, sugar, and diced dragon fruit until smooth. Add the sweet and condensed milk and blend for another 30 seconds. With the motor running, slowly pour in the cooled gelatin mixture and process until well combined.
  5. Pour the mixture over the chilled biscuit base and refrigerate overnight or until fully set.
  6. Once set, remove the cheesecake from the pan and transfer it to a serving platter.
  7. Decorate with extra dragon fruit, berries, or a combination of both as desired or even layer with raspberry jelly mixed with some dragon fruit pure,
